The Brief
Esquire Magazine contacted us to film and produce a pilot episode for their new series, Dishes That Changed London.
The first instalment focused on The Palomar, a vibrant boutique restaurant in the heart of Soho, serving modern Israeli cuisine.
We filmed the chefs preparing Octohummus, one of The Palomar’s most iconic dishes, and interviewed Layo Paskin, the restaurant’s founder and creative director. He described his background and his inspiration for The Palomar, as well as speaking more broadly about the cultural importance of food in London today.
